Wickham Olive Grove is famous for its reputable farming and quality produce as the fruit is left to ripen on the trees naturally. We don't pick them early when they're green and then dye them black, or use lye or preservative. Upon harvest, traditional fermentation is followed to ensure that it’s rich in flavor and color is preserved. The olives are processed quickly after harvest using our own fermentation equipment on site.
